ITALIAN PASTA SALAD
●1/2 Box pasta (about 3c cooked; I used a green lentil, kale, spinach, and cauliflower pasta
●1c Chopped fresh green beans
●1/2c Italian dressing (mine was a house Italian from aldi)
●1/2c Vegan deli slices (I used Tuscan-Flavored slices)
●1/2c Diced red onion
●1/2c Sweety drop peppers
●1/2c Diced bell peppers
●1/2c Lupini beans
●1/4c Dairy free parm
1. Cook pasta according to box, adding green beans for last 2 min. Drain and rinse with cold water.
2. Add drained pasta and all other ingredients to a large bowl and mix. Taste and adjust, adding seasoning as needed based on the ingredients you use. I didn't need to add any with mine!
3. I served this chilled and reserved more dressing to add for serving since I ate it the next day.
